Ingredients

  • 1 cup - Basmati rice
  • 1 - cauliflower ( Large)
  • 1 - onion ( Large)
  • 6 - garlic
  • 3 - green chillies
  • 1.5 tbsp - cashew
  • 1 - bay leaf
  • 2 sprigs - curry leaves
  • 1 sprig - coriander leaves
  • 2 tbsp - channa dal
  • 1/4 tsp - garam masala powder
  • 1/4 tsp - turmeric powder
  • 1 tsp - red chilli powder
  • Ginger - small piece
  • For making masala paste:
  • 3 tbsp - dry shredded coconut
  • Ginger - 1/2 Inch
  • 5 - Garlic
  • 4 - green chillies
  • 1.5 tsp - dhania
  • 5 - red chilli
  • For making masala powder:
  • 2 - cardamom
  • 1 - clove
  • 2 - bay Leaves
  • 1/4 tsp - pepper
  • 1 sprig - curry leaves

How to Make Cauliflower Kofta Pulav

  • Soak Basmati rice in water for 10 mins.
  • Pressure cook cauliflower for 4-5 mins.
  • Then make a paste out of cauliflower (by smashing it finely) then add garam masala, turmeric powder, channa dal, salt, onions, red chilli powder, coriander leaves and then make it into small balls and deep fry the balls in oil.
  • Now fry garlic, onion, bay leaves and cashew in ghee then add the masala paste.
  • Fry till raw smell goes, then add masala powder to the mixture.
  • Now add the Basmati rice to this mixture, fry for few seconds then add 2 cups of water and salt as required.
  • Pressure cook the rice in low heat for 10 minutes.
  • After rice is cooked decorate it with coriander leaves and koftas (fried cauliflower balls) to it.
  • Serve hot with potato chips and raita.
