Ingredients

  • 200 gms - Boneless Chicken leg (cut into bite sized chunks)
  • 1 - Egg for marination
  • 1 tbsp - Flour for marination
  • A small handful of diced chilli
  • 25 gms - Garlic Cloves (peeled)
  • A couple of pieces of cassia bark or Cinnamon stick
  • 1 tbsp - Chilli bean paste
  • 200 ml - Chicken stock
  • 2 tbsp - Wine
  • 1/4 tbsp - Dark soya sauce
  • Salt to taste
  • 3 Spring onions green part (cut into 1/2 inch pieces)
  • A couple of strips of red or green pepper or both 
  • 1-2 tsp - Sesame oil
  • 200 ml - Groundnut oil for coating

How to Make Changde Clay Pot Chicken

  • Marinate the chicken and deep fry.
  • In a pan, pour the oil, the dry ingredients and stir fry.
  • Put the fried ingredients in a clay pot.
  • Add stock, chicken and the rest of the ingredients to the wok.
  • Stir fry and pour the mixture on the dry ingredients in the clay pot and mix well.
  • Serve piping hot in the earthen clay bowl.
  • Add fry chillies on top.
