Char-magaz literally means 'Four Brain', indicating a mixture of four seeds that are good for the brain. 

In this version of the charmagaz, Cucumber seeds, muskmelon seeds, watermelon seeds and pumpkin seeds are soaked in water and ground into a paste. 
  
Charmagaz is used in Mughlai cooking to add thickness and depth to gravies. They are also used to make Thandai during Holi. You could also add a pinch to milk for extra nutrition.

Ingredients

  • 1 tbsp - cucumber seeds
  • 1 tbsp - muskmelon seeds
  • 1 tbsp - watermelon seeds
  • 1 tbsp - pumpkin seeds

How to Make Charmagaz Paste

  • Boil 1 cup water.
  • Allow it to cool, before using.
  • Soak all the seeds in this water.
  • Keep it aside for 3 hours.
  • Using the same water, grind it to a very fine paste.
  • Refrigerate and use as required.
