Ingredients

  • 1 - large ripe pineapple
  • 300 g - paneer
  • 1/2 cup - grated cheese
  • 1/2 tsp - dry mustard
  • 1/2 tsp - salt
  • 2 tbsp - finely minced capsicum
  • 1/2 tsp - freshly ground pepper
  • 1 tbsp - rum or brandy

How to Make Cheese Stuffed Pineapple

  • Slice off the top of the pineapple and keep aside.
  • Scoop out the fruit and cut into very small cubes.
  • Cream the cheese in a bowl then mix in all the other ingredients, one at a time, leaving the pineapple for the last.
  • Put the mixture back into the pineapple shell, cover with the top and chill for 1 hour, or longer.
