Ingredients

  • 2 cups - graham cracker crumbs
  • 1/3 cup - Sugar
  • 1/2 tsp - ground Cinnamon
  • 1/2 cup - Butter or margarine, melted
  • For the Filling:
  • 250 g - packaged Cream cheese, softened
  • 1.5 cups - Sugar
  • 1 tsp - vanilla extract
  • 4 - eggs, separated
  • Few - fresh fruit
  • How to Make Cheesecake Dessert Cakes:

    1. In a small bowl, combine the cracker crumbs, sugar and cinnamon. Stir in butter.
    2. Press into a greased 15 inch x 10 inch x 1 inch baking pan.
    3. Bake at 350 degrees F for 5 minutes.
    4. In a large mixing bowl, beat cream cheese, sugar and vanilla, until smooth.
    5. Add egg yolks and beat on low speed, just until combined.
    6. In a small mixing bowl, beat egg whites until, soft peaks form.
    7. Fold into the cream cheese mixture.
    8. Pour over the crust.
    9. Bake for 28 to 39 minutes or until the centre is almost set.
    10. Cool on a wire rack for 30 minutes.
    11. Refrigerate overnight.
    12. Garnish with fruit.
