Ingredients

  • 450 g - sweet potatoes
  • 2 eggs
  • Salt and pepper
  • 75 g - cheddar cheese
  • 25 g - plain flour
  • 50 g - fresh white breadcrumbs
  • Oil for deep frying

How to Make Cheesy potato balls

  • Peel the potatoes, cut into pieces.
  • Place in a saucepan, cover with salted water, bring to the boil and cook until tender.
  • Drain well, then mash thoroughly.
  • Separate eggs, add yolks to the potato with salt and pepper and mix well.
  • Grate cheese, beat into potato mixture. Leave to cool.
  • Form potato mixture into balls about the size of a large walnut, roll in flour.
  • Beat the egg whites lightly on a plate.
  • Roll potato balls in egg white and then in breadcrumbs.
  • Heat oil to 190 degree C.
  • Place potato balls, a few at a time, in a frying basket.
  • Deep fry in fat until golden brown.
  • Drain on kitchen paper. Serve hot.
