Ingredients

  • 250 gms - yam chop
  • 2 to 3 pinches - alum powder
  • salt to taste
  • pepper to taste
  • coconut oil to deep fry
  • large bowl of cold icy water

How to Make Chena Upperi

  • Peel yam and wash it cleanly.
  • Slice it into thin chips, with a chip slicer.
  • Make sure chips fall into bowl of icy water.
  • Add alum to this water before adding chips.
  • Keep it soaked for 25-30 minutes.
  • Drain out on kitchen towel, dab them dry.
  • Deep fry in hot oil, over medium flame till they become crispy.
  • Drain it and keep it aside till required.
  • When all the chips are done, re-fry them again in hot oil in batches till they are crisp again.
  • Drain them on an absorbent paper, to soak extra oil.
  • Sprinkle salt, pepper, toss to blend different flavours.
  • Cool it completely and store it in an airtight container.
