  • Chenai - 1kg (yam)
  • Red Chilli powder - 1/2 tsp
  • Hing powder - 1/4 tsp
  • Haldi powder - 1/2 tsp
  • Tamarind - 1 small Lemon size ball
  • Salt to taste
  • Oil to fry
  • How to Make Chenai Suran Fry:

    1. Remove the tough skin of the chenai and cut it into very small square pieces. Wash the pieces thoroughly.
    2. In a vessel, put chenai (yam), hing powder, haldi powder, red chilli powder, salt, and tamarind juice. Allow it to marinate for 2 to 3 hours.
    3. This will ensure that the yam becomes slightly soft.
    4. Ensure that all the masala absorbs into the vegetable.
    5. Heat oil in a pan and fry the yam till crisp. These are like chips.
    6. The Chenai upperi, as it is known down south, is ready to serve.
    7. Try it with rice and sambhar or rasam, or you can just eat it like chips.
