Ingredients

  • Chenai - 1kg (yam)
  • Red chilli powder - 1/2 tsp
  • Hing powder - 1/4 tsp
  • Haldi powder - 1/2 tsp
  • Tamarind - 1 small lemon size ball
  • Salt to taste
  • Oil to fry

How to Make Chenai Suran Fry

  • Remove the tough skin of the chenai and cut it into very small square pieces. Wash the pieces thoroughly.
  • In a vessel, put chenai (yam), hing powder, haldi powder, red chilli powder, salt, and tamarind juice. Allow it to marinate for 2 to 3 hours.
  • This will ensure that the yam becomes slightly soft.
  • Ensure that all the masala absorbs into the vegetable.
  • Heat oil in a pan and fry the yam till crisp. These are like chips.
  • The Chenai upperi, as it is known down south, is ready to serve.
  • Try it with rice and sambhar or rasam, or you can just eat it like chips.
