  • 225g - plain flour
  • 75g - Brown sugar
  • 50g - ground Almonds
  • 300 ml - Milk
  • 50 ml - Sunflower oil
  • 1 - Egg
  • 100g - dried Cherries
  • 3 tbsp - Lemon juice
  • 1 tsp - baking powder
  • 1 tsp - vanilla essence
  • Almond flakes to decorate
  • Honey to serve
  • How to Make Cherry and Almond Muffin:

    1. Preheat the oven to 190 degree Celsius. Grease and line a muffin tin with 12 muffin cases.
    2. Sift together flour and baking powder. Add the sugar, ground almonds and cherries, and mix well.
    3. Beat together egg, milk, oil, lemon juice and essence. Pour the wet ingredients into the dry ingredients, and stir well until they are just combined.
    4. The mixture should look lumpy. Do not over mix, or the muffins will get tough.
    5. Spoon the mixture into the prepared muffin cases. Sprinkle with flaked almonds.
    6. Bake in the preheated oven for 25 minutes until well risen. Take it out, leave it to cool in the tin for 5 minutes, transfer to a wire rack to cool.
