How to Make Cherry and Almond Muffin

  • Preheat the oven to 190 degree Celsius. Grease and line a muffin tin with 12 muffin cases.
  • Sift together flour and baking powder. Add the sugar, ground almonds and cherries, and mix well.
  • Beat together egg, milk, oil, lemon juice and essence. Pour the wet ingredients into the dry ingredients, and stir well until they are just combined.
  • The mixture should look lumpy. Do not over mix, or the muffins will get tough.
  • Spoon the mixture into the prepared muffin cases. Sprinkle with flaked almonds.
  • Bake in the preheated oven for 25 minutes until well risen. Take it out, leave it to cool in the tin for 5 minutes, transfer to a wire rack to cool.
