Ingredients

  • 250 g - skinless boneless chicken (fat removed)
  • 1 liter - chicken stock
  • 1 - cinnamon stick, 2 inches
  • 2 - star anise
  • 2 tbsp - dark soya sauce
  • 3 tbsp - tomato puree
  • 100 g - chestnuts, cleaned and sliced
  • 2 cups - brown rice, cooked
  • 1 tbsp - orange rind
  • 6 tbsp - orange juice
  • To taste - pepper
  • To taste - salt

How to Make Chicken - Chestnut and Rice Soup

  • Boil the chicken and shred it.
  • Take a large saucepan and put the chicken stock, with the boiled shredded chicken in it.
  • Then add cinnamon, star anise, soya sauce, tomato puree and chestnuts.
  • Cover the pan and simmer gently for about 10 minutes.
  • Remove and discard the cinnamon and the star anise.
  • Stir in the rice, orange rind and juice.
  • Season with salt and pepper.
  • Garnish with strips of orange rind.
