  • 8 boneless chicken breasts
  • For marinade:
  • 6 cloves garlic, coarsely chopped
  • 1 tsp - ground cumin
  • 1 tsp - dried oregano
  • 1 tsp - dried thyme
  • 2 tbsp - coriander, finely chopped
  • 2 tbsp - parsley, finely chopped
  • 6 tbsp - sour cabbage juice/lime juice
  • 4 tbsp - olive oil
  • pepper as required
  • salt to taste

How to Make Chicken Adobo with Mango Salsa

  • Remove all skin and fat from the chicken breasts.
  • Make 1 cm deep gashes on the side of all pieces with a sharp knife.
  • Pat dry with paper.
  • Mash garlic with shallot and herbs in a mortar and pestle.
  • Work in remaining ingredients for marinade (alternatively blend these together to save time).
  • Transfer the marinade to a non-reactive bowl and cover.
  • Leave in the refrigerator for at least 2 hours.
  • Preheat the grill. Cook breasts for about 3-4 minutes on each side.
  • Serve with a small helping of the mango salsa.
