Ingredients

  • Chicken breast fillets, cut into 2 cm pieces - 500 gm
  • Barley - 1/2 cup
  • water - 4 cup
  • coriander sprigs 8 to 10
  • fresh root Ginger 3 piece
  • soya oil - 1 tbsp
  • garlic, minced - 2 tsp
  • onion, chopped fine - 1/2 cup
  • chili powder - 1/2 tsp
  • cumin powder - 1 tsp
  • Tomato puree - 1/2 cup
  • fresh Lime juice - 3 tbsp
  • Coriander leaves to garnish
  • pepper to taste
  • salt to taste

How to Make Chicken and Barley Soup

  • Cover barley with water.
  • Tie the coriander sprigs in a bunch and add to barley.
  • Add root ginger. (Do not chop).
  • Simmer till the barley is cooked.
  • (Pressure cooker may be used to reduce the cooking time.)
  • Lift out the coriander sprigs and ginger and discard.
  • Heat olive oil, fry garlic till golden brown.
  • Add onion and barley with the cooking liquid.
  • Add chili and cumin powder, tomato puree, chicken, salt and pepper.
  • Simmer till the chicken is cooked.
  • Add lime juice and coriander leaves and serve hot.
