Ingredients

  • 500 g - Chicken
  • 8 spring onions, chopped
  • 1 - stalk Lemon grass, chopped
  • 1 - Clove garlic, crushed
  • 1 - Egg white
  • 1 tbsp - oil
  • 1 tbsp - chopped fresh Coriander leaves
  • 1 tbsp - Thai sauce
  • 2 tsp - chilli sauce
  • 8 slices - stale bread, crusts removed
  • oil for shallow frying

How to Make Chicken and Coriander Toast

  • Combine the chicken, spring onions, lemon grass, garlic, egg white, oil coriander, sauces and lemon juice in a food processor.
  • Process until finely chopped.
  • Spread the chicken mixture generously over the bread.
  • Cut each slice into 4 triangles.
  • Heat 1-2 cm oil in a pan.
  • Add the bread and cook, chicken side down for 2-3 minutes.
  • Turn over and cook the other side for 1 minute or until golden and crisp.
  • Drain well on paper towels.
