  • 1 kg - Chicken breasts (skinless and boneless)
  • 250 gm - Hummus
  • 4 Cloves Garlic - crushed
  • 6 tbsp - green olives, finely chopped
  • 4 tbsp - Basil leaves, chopped
  • Juice of 1 Lemon
  • Salt to taste
  • 2 tbsp - coriander leaves, chopped
  • Tabasco sauce
  • Extra green Olives to garnish

How to Make Chicken breasts with hummus

  • Halve each chicken breast.
  • Place the chicken in a shallow dish.
  • Add garlic and half the quantity of hummus.
  • Turn chicken to coat with hummus on both sides.
  • Let the chicken marinate for 2 hours.
  • Remove the chicken breasts from the dish.
  • Dry them gently with absorbent paper towels.
  • Brush the chicken with olive oil.
  • Barbeque quickly over medium heat until cooked through.
  • Remove from the grill, sprinkle lemon juice over each chicken piece, and add salt and Tabasco to taste.
  • Combine remaining hummus, finely chopped olives and basil leaves in a bowl.
  • Spread hummus mixture on each chicken piece.
  • Garnish with chopped coriander and olives.
  • Serve with roasted capsicum.
