Ingredients

  • 500 gm - chicken breast fillets
  • For marinade:
  • 1 small piece fresh ginger, grated
  • 2 cloves - garlic, crushed
  • 8 tbsp - soy sauce
  • 2 tbsp - groundnut oil
  • 1 or 2 - dried red chillies
  • 1 tsp - ground coriander seeds
  • 1 tsp - sugar
  • For peanut sauce:
  • 1 onion
  • 1 or 2 cloves garlic
  • 150 gm - crunchy peanut butter (approx)
  • 150 ml - vegetable stock
  • 100 ml - coconut milk1 lime
  • soy sauce
  • oil as required
  • wooden skewers

How to Make Chicken Kebabs with Peanut Sauce

  • Finely chop the chillies and mix with the remaining marinade ingredients.
  • Cut the chicken into thin strips, mix with the marinade and place in the fridge for 3 hours.
  • Thread the marinated strips of chicken onto skewers in a zig-zag pattern and grill or bake in the oven for 5 minutes.
  • To make peanut sauce:
  • Finely chop the onion and fry gently with the crushed garlic until transparent.
  • Stir in the peanut butter. Stock and boil until slightly reduced.
  • Dilute with coconut milk until the desired consistency is obtained.
  • Season to taste with soy sauce and lime juice.
