Ingredients

  • For the chicken:
  • 750 g - chicken, cut into medium pieces (with or without skin)
  • 1/2 tsp - Red Chilli powder
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - salt
  • For Chicken stock:
  • 2 - onions, finely chopped
  • 1 tsp - chopped Ginger
  • 6 Cloves - Garlic
  • 2 - tomatoes, chopped
  • 2 - Cardamom
  • 2 - Cloves
  • 1 - Cinnamon stick
  • 1 small piece - dried Lemon
  • 3/4 tsp - salt
  • 5 cups - water
  • For rice:
  • 2 cups - Extra-long grain basmati Rice
  • 4 cups - Chicken stock
  • 1/2 tsp - salt
  • Dried Lemon from the Chicken stock
  • For Raita:
  • 250 ml - medium thick Curd
  • 1 big - onion, chopped
  • 1 big - tomato, chopped
  • 2 tsp - Mint and Coriander leaves
  • 1/2 tsp - salt
  • How to Make Chicken Majboos:

    1. In a bowl, marinate chicken pieces with the ingredients under chicken. Cover and keep aside for half an hour.
    2. Chicken stock:
    3. In a bowl mix all the ingredients together.
    4. Add marinated chicken pieces, cover and cook on a medium to low heat for 30 - 40 minutes until done.
    5. When the stock cools, strain with a sieve.
    6. Measure the chicken stock. It should be about 4 - 4.5 cups.
    7. Discard everything except chicken pieces and dried lemon.
    8. Now heat oil and on medium flame gently fry cooked chicken pieces until golden colour.
    9. For the rice:
    10. In a pan, boil chicken stock, dried lemon and salt to taste.
    11. When it starts boiling, add drained rice and mix well.
    12. Cover and cook on a medium to low heat for 15-18 minutes until done.
    13. Once done, layer with the chicken.
    14. For Raita:
    15. In a bowl, mix medium thick yogurt and all the other ingredients.
    16. Serve as a side dish with majboos.
