Ingredients

  • 1 kg - ripe red Tomatoes
  • 10 cup - water
  • 2 cubes - Maggi Chicken stock
  • 3 - each medium size onions, zucchini, Potatoes and Carrots
  • 4 loaves - bread
  • 1 tsp - mixed spice
  • 1 tsp - Cinnamon
  • 1 tsp - salt
  • 1 sprig - green coriander chopped
  • 1 - hot chilli
  • 1 tsp - garlic, crushed
  • 2 tbsp - Corn oil
  • 1 chicken, boneless, cubed

How to Make Chicken Markouk

  • Peel the onion and the rest of the vegetables.
  • Peel wash and cut the vegetables and place in separate bowls.
  • Sprinkle spices, salt, coriander, garlic and oil into each vegetable bowl, mix separately and set aside.
  • Boil chicken in water and add zucchini and tomatoes (in that order) to chicken, just before it is done.
  • Add Maggi chicken stock cubes and simmer until cooked.
  • Cut loaves into small squares after trimming away edges, then add to chicken and vegetable mixture.
  • Stir over a low heat for 15 mins and serve hot
