  • 1 - Chicken
  • 3 - Chicken livers
  • 4 tbsp - mushrooms, finely chopped
  • 1 - onion, finely chopped
  • 3 to 4 tbsp - Butter
  • 1 - Egg
  • 1/2 cup - flour
  • For frying - breadcrumbs
  • For frying - Ghee
  • Few - cashew nuts, chopped and fried
  • How to Make Chicken Parcels:

    1. Clean the chicken and keep the breast aside.
    2. Chop the rest of the chicken into small pieces.
    3. Saute onions in butter.
    4. Add the chicken pieces, mushrooms, seasoning and fry lightly.
    5. Blanche chicken livers in hot water and cut into small pieces and add to mixture.
    6. Cut each chicken breast, into three slices, beat and spread them out well.
    7. Place a little of the mixture on each, roll and secure with a string.
    8. Dredge with flour on all sides, brush with beaten egg and roll in breadcrumbs.
    9. Heat ghee and fry till brown all over.
    10. Transfer to a casserole, sprinkle chopped cashew nuts and bake in a moderate oven for 20 minutes.
