Ingredients

  • 1 kg - chicken
  • 3 - onions
  • 1 piece - ginger
  • 5 cloves - garlic
  • 1 - bay leaf
  • 1" stick - cinnamon
  • 4 - cloves
  • 1/2 tsp - turmeric
  • 2 tbsp - oil
  • 1 tsp - salt
  • 2 tsp - chilli powder
  • a handful of coriander leaves
  • 1/2 cup - tamarind extract

How to Make Chicken Pulusu

  • Soak the tamarind in warm water.
  • Make a paste of the ginger and garlic.
  • In a vessel, heat oil and add the bay leaf, cinnamon, cloves, chopped onions and turmeric. Fry until brown.
  • Add the ground paste and fry it brown
  • Add the chicken pieces, chilli powder, salt and tamarind juice.
  • Cook the chicken until it's tender.
  • Garnish with coriander leaves.
