  • 4 Chicken breast fillets
  • 1 tbsp - oil
  • 120 gms - dried Figs
  • 1 cup - Mango nectar
  • 1/4 cup - Chicken stock
  • 1 tbsp - mixed dried herbs
  • 2 tbsp - chopped Parsley
  • Salt and pepper to taste

How to Make Chicken with figs

  • Cut the chicken into bite size pieces.
  • Heat oil in a non-stick pan and saute the pieces until well browned.
  • Combine the chicken, figs, mango nectar, chicken stock and mixed herbs in a large microwave-safe dish.
  • Mix well and cook on Medium High for 12 mins, stirring once after 6 mins.
  • Add salt and pepper to taste and set aside for 10 mins. Before serving sprinkle parsley over it and serve warm.
