Ingredients

  • 1.5 liter water or vegetable stock
  • 1 cup - cooked chickpeas
  • 1/2 cup - onion, finely chopped
  • 1/2 cup - zucchini, diced
  • 1/2 cup - carrot, diced
  • 1/2 cup - tomato puree
  • 1 tbsp - vegetable or peanut oil
  • 2 tsp - garlic, minced
  • 1/2 tsp - dried thyme
  • 1/2 tsp - dried rosemary
  • 1 tsp - cumin powder
  • 1 tsp - coriander powder
  • 1/2 tsp - black pepper powder or to taste
  • 2 stalks celery, chopped
  • salt to taste

How to Make Chickpeas and Vegetable Soup

  • Heat the oil in a deep pan.
  • Fry onion and garlic till fragrant.
  • Stir in all the ingredients from thyme to pepper powder.
  • Add celery, carrot and zucchini.
  • Add water or stock.
  • Simmer till the vegetables are cooked.
  • Stir in the tomato puree, chickpeas and salt.
  • Simmer for 5 minutes. Serve hot.
