Ingredients

  • 1.5 liter water or vegetable stock
  • 1 cup - cooked Chickpeas
  • 1/2 cup - onion, finely chopped
  • 1/2 cup - zucchini, diced
  • 1/2 cup - carrot, diced
  • 1/2 cup - Tomato puree
  • 1 tbsp - vegetable or Peanut oil
  • 2 tsp - garlic, minced
  • 1/2 tsp - dried Thyme
  • 1/2 tsp - dried Rosemary
  • 1 tsp - cumin powder
  • 1 tsp - coriander powder
  • 1/2 tsp - black pepper powder or to taste
  • 2 stalks celery, chopped
  • salt to taste
  • How to Make Chickpeas and Vegetable Soup:

    1. Heat the oil in a deep pan.
    2. Fry onion and garlic till fragrant.
    3. Stir in all the ingredients from thyme to pepper powder.
    4. Add celery, carrot and zucchini.
    5. Add water or stock.
    6. Simmer till the vegetables are cooked.
    7. Stir in the tomato puree, chickpeas and salt.
    8. Simmer for 5 minutes. Serve hot.
