  • 3 - small cucumbers, peeled, cored and diced
  • 1 - small onion, finely chopped
  • 2 tbsp - mint, finely chopped
  • 2 - garlic, finely chopped
  • 1.25 cups - fresh Curd
  • Salt- to taste
  • Pepper to taste
  • 1 tsp - oil

How to Make Chilled Cucumber Mint Soup

  • Heat a pan with oil and saute the onion till translucent.
  • Switch off and let cool.
  • Transfer all the ingredients including onions into a blender and blend for about 30 sec.
  • Check the seasoning.
  • Transfer to a bowl and chill in the refrigerator. Garnish with mint leaves before serving.
