Ingredients

  • 3 cups - watermelon juice
  • 1/2 piece - ginger
  • 1 - small green chilli
  • 2 to 3 tbsp - cream, whipped smooth
  • 1 small sprig - finely chopped mint
  • 1 tsp - sugar
  • 1 slice - bread
  • pepper to taste
  • salt to taste

How to Make Chilled Melon Soup

  • Grate ginger, keep it aside.
  • Blend watermelon juice with bread, ginger and green chilli. Sieve.
  • Add sugar, and salt. Chill for 2 hours.
  • Serve in individual soup bowls.
  • Carefully pour a swirl of cream, sprinkle freshly ground black pepper and a tiny amount of chopped mint.
