Ingredients

  • 3 cups - Watermelon juice
  • 1/2 piece - Ginger
  • 1 - small Green chilli
  • 2 to 3 tbsp - cream, whipped smooth
  • 1 small sprig - finely chopped Mint
  • 1 tsp - Sugar
  • 1 slice - bread
  • pepper to taste
  • salt to taste
  • How to Make Chilled Melon Soup:

    1. Grate ginger, keep it aside.
    2. Blend watermelon juice with bread, ginger and green chilli. Sieve.
    3. Add sugar, and salt. Chill for 2 hours.
    4. Serve in individual soup bowls.
    5. Carefully pour a swirl of cream, sprinkle freshly ground black pepper and a tiny amount of chopped mint.
