Ingredients

  • 10 g - fresh Galangal
  • 1 - egg, for marination
  • 1 tbsp - Corn flour, for marination
  • 2 - fresh Lemon grass, crushed
  • 5 - kafir Lime leaves
  • 10 - fresh Red Chillies
  • 20 - sweet Basil leaves
  • 4 - chopped Onions
  • 1 cup - stock
  • 180 g - sliced fish
  • 3 tbsp - fish sauce
  • 2 tbsp - Lemon juice
  • 2 tbsp - Oyster sauce
  • How to Make Chilli Basil Fish in Clay Pot:

    1. Pound the chillies, lemon grass, kafir lime leaves and basil leaves together and keep aside.
    2. Marinate the fish with egg and corn flour and deep-fry in hot oil.
    3. Heat 1 tbsp of oil in a pan and stir-fry the pounded ingredients with sliced ginger and onions.
    4. Add the stock, oyster sauce, fish sauce and bring to boil in a clay pot.
    5. Add fish and finish with lime juice.
    6. Serve hot. |
