Ingredients

  • 50 gm - dried Rice noodles, crushed
  • 750 gm - minced Chicken
  • 2 tsp - finely chopped fresh Lemon grass
  • 2 tsp - chopped fresh Red Chilli
  • 1 tsp - finely grated Lime rind
  • 2 tbsp - chopped fresh Coriander leaves
  • plain flour
  • 2 tbsp - Peanut oil
  • 1/3 cup (80 ml) - Lime juice
  • 2 tbsp - fish sauce
  • 2 tbsp - Brown sugar
  • 1/4 cup (60 ml) - dry white wine
  • 1/3 cup (80 ml) - sweet chilli sauce

How to Make

  • Place noodles in small heatproof bowl, cover with boiling water, stand until just tender; drain.
  • Combine noodles with chicken, lemon grass, chilli, rind and half the coriander in large bowl.
  • Shape 1/4 cups of mixture into patties; toss in flour, shake off excess.
  • Heat oil in large pan; cook patties, in batches, until browned both sides and cooked through.
  • Combine remaining ingredients in jar; shake lime sauce well.
  • Serve chicken patties with lime sauce.
  • Makes about 14 and the mixture as well as the sauce can be prepared a day ahead.
