Ingredients

  • 400 gms - rice, washed and soaked for 30 mins.
  • Salt to taste
  • 150 gms - mixed vegetables (diced carrots, green peppers, beans, etc.)
  • 1 large onion, sliced
  • 3 tsp - crushed Garlic
  • 5 tsp - grated Ginger
  • 2 tbsp - oil
  • 50 gms - Prawns (optional)
  • 50 gms - cooked Chicken bits (optional)
  • 2 eggs
  • 1 tsp - Tabasco sauce (or to taste)
  • 3 tbsp - soya sauce
  • Ground black pepper to taste

How to Make Chinese style rice

  • Wash, soak and drain the rice, then boil it in fresh water, adding salt to taste, until just cooked (about 40 mins.)
  • Drain and rinse.
  • Stir fry the vegetables with the onion, garlic and ginger and put aside.
  • Stir fry the prawns and chicken bits (if using) and put aside.
  • Scramble the eggs and put aside.
  • Put all the ingredients except the rice, eggs and black pepper into the fry-pan, stir and heat gently.
  • Carefully mix all the ingredients into the rice and serve.
