  • 1 bar - dark chocolate
  • 1 bar - white chocolate
  • 1 tbsp - rum
  • 200 g - frozen raspberry
  • 60 g - sugar
  • 25 g - corn starch

How to Make Choc Raspberries

  • To make Raspberry Filling:
  • When the frozen berries cool to room temperature heat it in a heavy bottom vessel. When the raspberries boil add sugar and corn starch.
  • When the corn starch gets cooked and clear remove from fire.
  • When the mixture cools add 2 tbsp rum.
  • Make small balls of the raspberry fillings. They will be sticky.
  • Melt the dark, white chocolate in double boiler or microwave for 30 to 60 seconds depending on the quantity.
  • Dip the raspberry balls in melted chocolate, place it on the butter paper, refrigerated until it sets.
