Ingredients

  • 3 cups - Rice (cooked)
  • 1 bunch (big) - Coriander
  • 1/4-inch piece - Ginger
  • 5-6 cloves - Garlic
  • 1 small cup - Coconut (fresh not dry, cut into small pieces)
  • 2-3 tbsp - Oil
  • Salt - to taste
  • A pinch - Turmeric Powder
  • 2 tbsp - Lime Juice
  • 5-6 - Cashew Nuts (broken into pieces and fried in ghee)
  • 1 tsp - Jeera
  • 1 tsp - Mustard
  • 1 tsp - Moong Dal
  • 3-4 - Green chillies (chopped)

How to Make Cilantro Rice

  • Chop the coriander.
  • Make a fine paste with the coriander leaves, ginger, garlic, and coconut.
  • Heat oil in a pan.
  • Fry mustard, jeera, and moong dal.
  • Then add the green chillies.
  • Sautee a little and then add the ground paste.
  • Sautee again and then add salt and turmeric powder.
  • Sautee for about half a minute, and then add the cooked rice.
  • Mix well till the rice turns into a beautiful green colour.
  • Cover and cook on low flame for a few minutes.
  • Then add lime juice and mix.
  • Garnish with cashew nuts.
  • Serve hot.
