Ingredients

  • For the dressing:
  • 1/2 cup - low fat mayonnaise
  • 1/2 cup - low fat Yoghurt
  • 1 tsp - vanilla essence
  • 1/4 tsp - grated Ginger
  • 1/4 tsp - powdered Cinnamon
  • For the salad:
  • 2 cups - cubed, steamed Chicken
  • 2 cups - seedless green Grapes
  • 1 cup - chopped Celery
  • 2 cups - fresh pineapple, cubed (reserve the shell for serving)
  • 1/2 cup - finely chopped red Capsicum

How to Make Cinnamon chicken salad

  • Combine all the salad ingredients, except pineapple, in a large bowl and set aside.
  • Combine all the dressing ingredients in a small bowl.
  • Pour the dressing over the salad.
  • Cover and refrigerate for at least 1 hour.
  • To serve:
  • Line a tray with plantain leaf or lettuce.
  • Place the pineapple shell on it.
  • Add the chopped pineapple into salad. Toss well.
  • Spoon the salad into the pineapple and serve.
