  • 1/2 cup - each of soft Butter and Sugar
  • 1 cup and 1 1/2 tbsp - sifted Refined flour
  • 2 - eggs, beaten
  • A big pinch of salt
  • 1 cup - Brown sugar
  • 1/2 tsp - baking powder
  • 1 cup - shredded Coconut
  • 1/4 cup - each of chopped walnut, almonds, groundnuts and Cashewnuts
  • How to Make Coconut Bars:

    1. Cream together butter and sugar.
    2. Mix in 1 cup and 1 1/2 tbsp. flour and mix thoroughly.
    3. Put in a well-greased baking pan and bake in a mode oven for 20 mins.
    4. While it is baking, beat the eggs well, mix in the remaining ingredients with the exception of coconut.
    5. Spread over the partly baked bottom, sprinkle coconut on top and continue baking till a knife inserted in the centre comes out clean.
    6. Cut into small slices while still warm.
    7. Cool and store in airtight tin.
