Ingredients

  • 2 cup - desiccated Coconut
  • 1.5 cup - splenda
  • Ghee or non-stick spray
  • Nuts like almonds, cashew, Pine Nuts
  • How to Make Coconut Cake for Diabetics:

    1. Grease the microwaveable pan with non-stick spray
    2. Put the desiccated coconut, microwave for a minute and stir it.
    3. Now add the splenda (artificial sweetener), stir and microwave for 2 mins
    4. Take it out, cool and stir.
    5. Spray the non-stick oil on the mixture and microwave for a minute
    6. Fry the nuts in the microwave in another dish by spraying with the fat free non-stick oil
    7. Then add the nuts to the coconut mixture and make small balls while still warm
