  • 1 cup - Rice, soaked for 30 min
  • 1 tbsp - Methi Seeds
  • 1 tsp - Cumin seeds
  • 1 tbsp - Ghee
  • 1 tbsp - Kasuri Methi (dried Fenugreek leaves)
  • Salt to taste
  • 1/2 cup - Coconut Milk
  • 1/2 cup - grated Coconut
  • 1 cup - Water
  • 1/2 tsp - Black Pepper
  • How to Make Coconut Fenugreek Rice:

    1. Drain the soaked rice and keep it aside.
    2. Heat ghee in a pan, throw in cumin seeds and let them crackle.
    3. Add methi seeds and fry it for a minute.
    4. Add kasuri methi and fry for just 10 seconds.
    5. Add grated coconut and roast it on a low flame till it gets a bit brownish in colour.
    6. Now add rice and roast it on a low flame for a minute.
    7. Don't overdo it or else the rice might burn. Recipe courtesy: UK Rasoi
