Ingredients

  • 1 cup - grated coconut
  • 1 tsp - urad dal
  • A few - dried red chillies
  • Mustard seeds - 1/4 tsp
  • Cumin seeds - 1/4 tsp
  • Cloves - 3
  • Pepper corns - 10
  • Curry leaves - a few
  • 2 pinches - asafoetida
  • Salt
  • 1 tbsp - butter
  • Basmati rice - 2 cup, cooked

How to Make Coconut Fried Rice

  • Spread the cooked rice in a wide plate to cool
  • Heat butter in a deep pan and when it melts splutter mustard seeds and urad dal
  • Cook till dal becomes golden brown. Then add cloves, split red chillies, pepper corns, cumin seeds, curry leaves, asafoetida.
  • Finally add the grated coconut. Fry the coconut to light brown
  • Mix rice to the fried mixture. Serve it with a little bit of ghee on the top
