Ingredients

  • 1 cup - Sugar
  • 1 cup - Brown sugar
  • 1 cup - shortening, melted
  • 2 eggs
  • 1 tsp - vanilla extract
  • 1 cup - flour
  • 1 tsp - soda
  • 1/2 tsp - salt
  • 4 cups - oats, regular and uncooked
  • 1 cup - coconut, flaked

How to Make Coconut oats cookies

  • Combine sugar and shortening, beating until light and fluffy.
  • Add eggs, one at a time, beating well after each addition. Stir in vanilla.
  • Combine flour, soda, and salt; add to creamed mixture, beating well.
  • Stir in oats and coconut.
  • Chill dough for an hour.
  • Shape dough into 1-inch balls.
  • Place them, 2 inches apart, on ungreased cookie sheets.
  • Bake at 325 degrees F - 140 C for 12 to 15 minutes.
