Ingredients

  • 1 cup - Butter
  • 1.5 cup - powdered Sugar
  • 4 - eggs
  • 2 .25 cups - sifted flour
  • 1 tsp - baking powder
  • 1/2 tsp - salt
  • 1/2 tsp - vanilla essence
  • 1 tsp - Lemon rind
  • 2 tsp - Lemon juice
  • 1 cup - desiccated Coconut
  • 1/3 cup - Milk
  • How to Make Coconut Tea Cake(with Eggs):

    1. Beat the butter with the powdered sugar.
    2. Beat in the eggs, one by one.
    3. Sift the flour together with the baking powder and salt.
    4. Add the vanilla essence, lemon rind and lemon juice to the egg mixture.
    5. Fold in the flour.
    6. Fold in the desiccated coconut. Add the milk.
    7. Line two greased 8-inch baking tins with oil free paper, grease and dust the paper.
    8. Pour in the cake batter.
    9. Bake at 170 deg C for about 25 mins. or until done. Cool for 5 mins.
    10. Turn out and gently peel off paper.
    11. Serve with a dusting of powdered sugar or sprinkle a little desiccated coconut on top.
