Ingredients

  • 1.5 cup - plain flour
  • 3/4 tsp - coriander powder
  • 1/2 tsp - cumin powder
  • 1.5 tsp - baking powder
  • 1 can creamed corn
  • 1 can corn kernels, drained
  • 1 spring onion, finely chopped
  • 2 small eggs, lightly beaten
  • 1/4 cup - or 1/2 cup - milk
  • 2.5 tbsp - chopped chives or coriander
  • Salt and pepper to taste
  • Oil for shallow frying

How to Make Corn fritters

  • Sift the baking powder, flour, coriander powder and cumin powder into a medium bowl, make a well in the centre and add the creamed corn, salt and pepper to taste. Mix and combine well.
  • Heat the oil in a non-stick frying pan. Take heaped spoonful of mixture and drop into the pan; slightly press down and flatten with a spatula.
  • Shallow fry few fritters at a time.
  • Brown the fritters on both sides.
  • Remove on absorbent paper towels.
