Ingredients

  • 3 -tbsp olive oil
  • 500 g - broken vermicelli, boiled
  • 100 g- onions, chopped
  • 1 tbsp- minced garlic
  • 200 g -tomatoes, peeled and chopped
  • 1 tbsp- minced red chillies
  • 1 cup -boiled corn
  • 1/2 tsp -dried oregano
  • Salt
  • 1/2 tsp - black pepper powder
  • 1/2 cup -grated cheese
  • A few sprigs - parsley, for garnishing

How to Make Corn Vermicelli

  • Heat oil in a casserole for a minute.
  • Add onions, garlic and mix.
  • Cover and microwave on high for 3 mins until onion becomes soft.
  • Add tomatoes and minced red chillies.
  • Microwave on high for 3 mins.
  • Add corn, oregano, salt and black pepper.
  • Mix and microwave on high for 1 minute.
  • Add vermicelli and mix well.
  • Just before serving, sprinkle cheese over the vermicelli, cover and microwave on high for 3 mins so that the cheese will melt.
  • Garnish with parsley and serve hot.
