Ingredients

  • 1/2 cup - grated cheddar cheese
  • 1/2 cup - grated Swiss cheese
  • 1/2 cup - yellow cornmeal
  • 1/2 cup - unbleached white flour
  • 1/2 cup - Cottage cheese
  • 2 eggs, beaten
  • salt to taste

How to Make Cornmeal and Cheese Dumplings

  • Mix all ingredients together thoroughly in a bowl.
  • Use your hands to form 1-inch balls.
  • In a large pot, bring 4 quarts of water to rolling boil.
  • Add as many dumplings as possible without crowding.
  • Reduce heat, cover and allow to simmer for 10 minutes.
  • Remove with a slotted spoon.
