Ingredients

  • 1 kg - Spinach
  • 3 - medium-sized Potatoes
  • 1/2 tbsp - Maida
  • 1 tsp - Sugar
  • 1 tsp - salt
  • 200 g - Cottage cheese
  • 1 tbsp - ginger-garlic paste
  • 15 - Raisins
  • 1/2 tsp - Sugar
  • 1/2 tsp - salt
  • 1 cup - oil
  • For the gravy: 2 - small Onions (for paste)
  • 1 tsp - ginger-garlic paste
  • 1 tbsp - cashew paste
  • 1 tsp - salt
  • 1 tsp - Sugar
  • 1/2 cup - water

How to Make Cottage Cheese and Spinach Kofta Curry

  • Heat 1 tsp of oil in a pan and fry the chopped spinach until quite soft.
  • Boil the potatoes and mash.
  • Mix the spinach with the mashed potatoes.
  • Add salt, sugar and maida and mix well.
  • Heat oil in a pan and add the cottage cheese, sugar, salt and ginger-garlic paste. Mix well and fry for 3 minutes, taking care that the cheese does not stick to the bottom of the pan.
  • Cool and make 10 small balls of the cheese and stick a raisin each in the centre.
  • Roll each ball in the spinach and potato mash to make koftas.
  • Fry the koftas until the spinach turns dark green. Set aside.
  • For the gravy: Heat oil in a pan and add the onion paste, ginger-garlic paste and fry for a few minutes.
  • Add the cashew paste, sugar and salt and fry for 2 minutes.
  • Add 1/2 cup of water and boil.
  • Add the koftas and simmer for 5 minutes. Serve hot.
