How to Make Courgette Masala

  • Wash and cut courgettes into thin roundels. Do not peel the green skin.
  • Chop the onions and tomatoes and store separately.
  • Make a paste of ginger and garlic.
  • Slit the green chillies lengthwise and de-seed if you do not require it too hot.
  • To a heated non-stick pan add oil.
  • Add mustard seeds to hot oil and allow to pop, now add the cumin seeds and onion, sauté for 5 mins till onions become translucent.
  • Add the courgettes and the green chili and sauté till the courgettes become translucent. About 10 mins.
  • Meanwhile the courgettes are getting ready in a separate pan sauté all the masala powders together, about 4 mins till the raw taste leaves it. Be careful not to burn.
  • To the masala powder add tomatoes, ginger and garlic paste and sauté till the tomatoes are soft and its juices make it a paste.
  • Add the tomato paste to the courgettes and stir well for another 2 mins. Remove from fire and serve hot.
  • Serve with naan.
