  • 1 cup - dry couscous
  • 1.5 cups - water
  • 1 - Onion
  • 1 - Tomato
  • 1 cup - peas
  • a few Curry leaves
  • 3-4 - Green chillies
  • a few Cilantro leaves
  • a little vegetable oil
  • 1 tsp - Mustard Seeds
  • 1 tsp - Urad Dal
  • 1 tsp - chilli powder
  • salt and Sugar to taste
  • How to Make Couscous Upma:

    1. Heat a non-stick pan and add 2 tbsp of vegetable oil.
    2. Add the mustard seeds and let them splutter.
    3. Add urad dal, curry leaves and finely-sliced green chillies. Saute until the dal turns light brown.
    4. Add thinly sliced onions and stir until they turn waxy and transparent.
    5. Add the chopped tomatoes with the peas.
    6. Add salt, sugar and chilli powder and mix well.
    7. Add water and boil for a few minutes.
    8. Add the couscous, mix well, turn the heat to low and simmer until all the water is absorbed.
    9. Fluff, add chopped cilantro leaves and serve hot or cold.
