Ingredients

  • 100 g - boneless Chicken breast
  • 1 - 2" piece of Spring onion
  • 1 slice - fresh Ginger
  • 100 g - Crab Meat
  • 12 - snow peas
  • 6 - button Mushrooms
  • 1 tbsp - Lemon juice
  • 5 - Lettuce leaves
  • For the dressing: 1/2 tbsp - dry mustard
  • 1 tbsp - Vinegar
  • 1/2 tbsp - Sugar
  • 1/4 tsp - salt
  • 1 tbsp - sesame oil
  • a few Lettuce leaves
  • How to Make Crabmeat and Chicken Salad:

    1. Steam the chicken, spring onion and ginger for about 20 minutes.
    2. When the chicken cools down slightly, shred into long bite-sized pieces.
    3. Crumble the crab meat into flakes.
    4. Remove tough strings from the snow peas and blanch quickly about 2 minutes. Rinse in cold water and drain well.
    5. Cut the mushrooms and crown into 2-3 slices.
    6. Sprinkle them with lemon to keep the colour.
    7. Combine the ingredients for the dressing and mix well.
    8. Spread lettuce leaves on a plate.
    9. Lightly toss the snow peas, mushrooms, chicken and crab meat together and place on top of the lettuce.
    10. Pour dressing before serving.
