  • 2 - carrots, medium sized (roughly chopped)
  • 1/4 cup - Milk
  • 1/2 cup - water
  • 1/2 medium sized - onion, finely chopped
  • 4 pearls - Garlic
  • 1/2 - Tomato
  • 1/2 tsp - pepper powder
  • Garam Masala - a generous pinch
  • 1 tsp - oil
  • 1/2 tsp - Butter
  • 2 tsp - Cream (for garnishing)
  • Salt as required
  • A few bread slices, cubed in small sizes (toasted)
  • How to Make Cream of carrot soup:

    1. Cook chopped carrots with 1/2 a cup of water, until it becomes soft; allow it to cool.
    2. Heat oil in a pan, add onions, garlic with a pinch of salt and saute for few minutes.
    3. Then add tomato and saute till it becomes mushy.
    4. Now add cooked carrots and onion tomato mixture to a blender and grind it to a smooth paste.
    5. Heat a pan, add butter and the ground mixture; fry for a minute or two.
    6. Now add milk, pepper powder, garam masala powder, required salt and bring it to a short boil.
    7. Switch off and garnish with cream.
    8. Serve hot or warm with garlic bread or soup sticks.
