  • 2 medium ripe avocados, seeded and peeled
  • 80ml - cold water
  • 25gm - fresh coriander leaves
  • 25 ml - fresh cream
  • 15 ml - fresh lime juice
  • 2 cloves garlic, quartered
  • 50 ml - Chicken stock
  • Chopped, avocado for garnish
  • Fresh cilantro leaves for garnish

How to Make Creamy and cold avocado soup

  • Place avocados, water, 1 cup cilantro, lime juice, garlic and vegetable stock in blender; cover. Blend until smooth.
  • Refrigerate for 1 hour.
  • Garnish with chopped avocado and cilantro.
  • Serve immediately.
