Ingredients

  • 2 medium ripe avocados, seeded and peeled
  • 80ml - cold water
  • 25gm - fresh Coriander leaves
  • 25 ml - fresh Cream
  • 15 ml - fresh Lime juice
  • 2 Cloves garlic, quartered
  • 50 ml - Chicken stock
  • Chopped, Avocado for garnish
  • Fresh Cilantro leaves for garnish
  • How to Make Creamy and cold avocado soup:

    1. Place avocados, water, 1 cup cilantro, lime juice, garlic and vegetable stock in blender; cover. Blend until smooth.
    2. Refrigerate for 1 hour.
    3. Garnish with chopped avocado and cilantro.
    4. Serve immediately.
