Ingredients

  • 1 lb - rotelle pasta
  • 1 pack - vacuum-packed silken firm tofu (like Mori-Nu)
  • 3/4 cup - soymilk
  • 1 cup - mint leaves
  • 2 - green chillies (like Serrano)
  • 3 - small garlic cloves
  • 1 tsp - cumin (roasted and ground)
  • Salt to taste

How to Make Creamy Bake Pasta in a Minty Tofu Sauce

  • Put all ingredients - except the pasta - into a blender and mix until it's a smooth sauce.
  • Place the cooked rotelle pasta into a square baking dish. Pour the sauce over it, and toss it so that the sauce makes its way through the pasta.
  • Bake in a preheated oven at 350-degree, for 15 minutes. If needed, turn the broiler on so the top layer turns golden.
