Ingredients

  • 500 g - large potatoes
  • 1/2 - small cabbage
  • 1/2 - red pepper
  • 1/2 - green pepper
  • 1 - cucumber
  • 1 - small lettuce
  • 125 g - feta cheese
  • 1/4 cup - French dressing
  • 1 stick - celery
  • 1/2 - cucumber
  • 4 - spring onions
  • 2 tbsp - chopped parsley
  • For the dressing: 1/4 cup - sour cream
  • 1/3 cup - mayonnaise
  • 1/4 cup - French dressing
  • salt and pepper
  • 1 tsp - mustard paste
  • 2 tbsp - finely chopped mint

How to Make Creamy Potato Coleslaw

  • Peel and dice the potatoes. Cook until tender. Drain and allow to cool.
  • Wash and finely shred the cabbage and put in a bowl.
  • Add seeded and chopped red and green peppers, sliced celery, peeled and diced cucumber, chopped spring onions, potatoes and parsley. Toss lightly.
  • Pour over the prepared dressing. Toss well.
  • For the dressing: Put all ingredients into bowl, mix well and serve.
