Ingredients

  • 2 - medium chicken breasts (boneless and skinless)
  • 1.5 cups - fresh bread crumbs (pulse day old bread and some parsley in a food processor)
  • 1/2 cup - curly parsley, finely chopped
  • 1 tsp - Cajun spices
  • 1/2 tsp - black pepper powder
  • Salt to taste
  • 1/2 tsp - red chilli powder
  • 5 tsp - grated Parmesan cheese
  • 1/4 cup - yogurt
  • Oil to fry
  • For Cajun spice mix: 2 tbsp - paprika
  • 1 tsp - salt
  • 1 tsp - black pepper
  • 1 tsp - garlic powder
  • 2 tsp - onion powder
  • 2 tsp - red chilli powder
  • 1 tsp - dried oregano
  • 1 tsp - dried thyme
  • 1 tsp - cumin powder

How to Make Crisp Parmesan Chicken Strips

  • Wash and dry chicken breast. Cut into strips and pound it to flatten it.
  • Mix some salt and black pepper with the yogurt.
  • Marinate chicken strips with yogurt for 1/2 hour.
  • Mix bread crumbs, parsley, Parmesan and spices.
  • In frying pan, heat 3-4 tbsps oil.
  • Coat yogurt-covered chicken strips with bread crumb mix and pan fry in oil till it becomes light brown or until cooked.
  • Tastes good by itself or with ketchup or any hot sauce.
