  • 200g - bhendi
  • 1/2 cup - corn flour
  • 1/2 cup - besan
  • 1.5 tsp - chilli powder
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - chaat masala
  • 1 tsp - pepper powder
  • Oil - 2 tbsp
  • Salt - to taste

How to Make Crispy Bhendi

  • Slit bhendis in the centre. Mix salt and pepper powder and apply it to the bhendi.
  • Mix besan, corn flour, chilli powder, hing (optional), turmeric, and salt. Then, add water and mix to make a thick batter, like for pakoras.
  • Heat oil, dip each bhendi in the batter, and deep-fry till crisp.
  • Sprinkle chaat masala over the fried bhendi and serve as a snack or a side dish with rice and dal.
