How to Make Crunchy Kerala Banana Chips

  • Peel the unripe bananas and cut into 1/2 slices.
  • Cut each slice into 4 pieces.
  • Heat the coconut oil in a 7 to 8 skillet and fry the banana pieces until golden brown and crisp.
  • Drain on paper toweling.
  • Dissolve the brown sugar in the water.
  • Boil for approximately 15 mins until it almost reaches the hard-ball stage.
  • It should be a thick syrup.
  • Add dry ginger powder and cardamom powder.
  • Stir.
  • Dip the banana cubes into the warm syrup.
  • Stir.
  • Remove from the syrup and spread on a plate to dry.
  • When the pieces are completely cool, the syrup should not be sticky.
  • Store the sweet banana pieces in an airtight container.
