  • 2 - medium sized Cucumbers
  • 3 cups - wheatflour
  • 1/2 cup - Orange juice
  • 1 tsp - ajwain seeds
  • 2 tbsp - Ghee
  • Oil for frying
  • Salt to taste
  • How to Make Cucumber Puris:

    1. Peel the cucumber, remove the seeds and grate to get the pulp of cucumbers. 
    2. Press between your palms to remove all the water from the grated cucumber. Keep aside.
    3. Sift together the wheatflour, ajwain seeds, salt, and the ghee and mix with your fingers. 
    4. Now, mix in the grated cucumber from which the water has been squeezed out and also mix in the orange juice and knead to form a stiff dough. Do not add any water.
    5. The cucumber and the orange juice should be enough to knead the wheatflour into the dough. 
    6. Divide the dough into small portions. 
    7. Shape each portion into a round ball.  
    8. Roll out each ball into a puri.
    9. Heat oil and fry the puris one or two at a time. 
    10. Serve with mango chutney or raita or karela sabji or any vegetable preparation you like.
