Ingredients

  • 2 - medium sized cucumbers
  • 3 cups - wheatflour
  • 1/2 cup - orange juice
  • 1 tsp - ajwain seeds
  • 2 tbsp - ghee
  • Oil for frying
  • Salt to taste

How to Make Cucumber Puris

  • Peel the cucumber, remove the seeds and grate to get the pulp of cucumbers. 
  • Press between your palms to remove all the water from the grated cucumber. Keep aside.
  • Sift together the wheatflour, ajwain seeds, salt, and the ghee and mix with your fingers. 
  • Now, mix in the grated cucumber from which the water has been squeezed out and also mix in the orange juice and knead to form a stiff dough. Do not add any water.
  • The cucumber and the orange juice should be enough to knead the wheatflour into the dough. 
  • Divide the dough into small portions. 
  • Shape each portion into a round ball.  
  • Roll out each ball into a puri.
  • Heat oil and fry the puris one or two at a time. 
  • Serve with mango chutney or raita or karela sabji or any vegetable preparation you like.
